When visiting the Cornish Chilli Farm in October 2024, to choose the chillies that would become the harvest of 2025, we were introduced to the hurt berry. It is an instantly striking chilli, with a crumbled appearance that appears inescapably vicious, and a Scoville rating that will ignite the palate.
We hadn't ever worked with a chilli so hot and, being utterly charmed, we knew we had to experiment.
While the hurt berry is undoubtedly hot, it's also handsome. The heat radiates with an unwavering force. Think of magma, sitting on the tongue. It wasn't a heat we could pair with the bright and tropical fruits of our other bottles, so we turned to the rich flowers of fig, giving the sauce a thick bass, one that harmonises with the heat to create an intimidating but absolutely delicious Blesys Sherp hot sauce.
Don't be put off by the fire. It's not nasty, just humbling.
