Paper Lanterns were, by far, one of the funkiest and most complex chillies we have fermented. Even over a relatively modest fermentation period, they developed a deep character that was as intriguing on the nose as it was on the palate.
What's more, the resulting mash, even when coupled with a vivid vinegar like white wine, was notably savoury, with a distinct, umami signature. To pair this with plums (keeping in our minds the idea of a plum sauce served on a savoury dish) seemed and proved to be a rational step.
The resulting hot sauce bottle is deeply moorish and a stand-out among this year's line-up. We think it pairs well with many dishes but would recommend, first of all, to taste it completely on its own.
Oh, and when it comes to the heat level, we debated between calling it mild or moderate. And, thinking of moderate as ever so slightly warmer than mild, decided to go with moderate.
